Introduction

Spices replace sodium and fat in this use of old fashioned dried Great Northern dried Beans. While I grew up eating them well seasoned with various fat meats I have found they are tasty enough if I use spices. While I grew up eating them well seasoned with various fat meats I have found they are tasty enough if I use spices.
Number of Servings: 6

Ingredients

    1 cup dry great Northern beans (soaked overnight and picked through then drained.)
    3 cloves chopped (or crushed) peeled garlic
    I medium raw onion, peeled and chopped
    2 tbsp green bell pepper, chopped
    1 medium rib celery with leaves, chopped
    1 tbsp cilantro, chopped
    2 tsp taco seasoning
    6 t o 8 cups water

Tips

I use a small dutch oven for this. I have also cooked it in a crock pot . If ou feel you really need meat I would use some lean diced ham cubes.


Directions

Soak beans over night. Pick through looking for loose pebbles etc. Drain and discard the water used for soaking. place beans in large pot with chopped herbs and vegetables. Bring to boil cover wit lid and reduce heat to simmer. Add more water during cooking if needed. Stir only if needed. Add taco seasoning 1 hour before beans are finished cooking. Beans will be soft when they have cooked/
