Spicy White Vegan Chili

    Onions, raw, 2 cup, chopped
    Garlic, 4 cloves, minced
    Olive Oil, 2 tbsp
    *Ortega Fire Roasted Diced Green Chilies, 4 oz
    *Chili powder, 1 tbsp
    *Spice, Oregano (dried), 1 tsp
    *cayenne pepper, 1/8 tsp
    *Beans - Cannelini white kidney beans (Eden organic, No salt added, low fat), 2 - 15.5 oz cans
    *Eden Foods Organic Garbanzo Beans (Low Sodium), 1 - 15.5 oz can
    *Imagine Organic Low Sodium Vegetable Broth, 29 oz


In a dutch oven, cook onions & garlic in hot oil over medium heat 5-6 minutes, stirring often, until tender. Stir in green chilies, chili powder, oregano and cayenne pepper; cook for 1 minute. Mash one can of beans. Add all beans and broth to ingredients in dutch oven. Bring to simmering. Cook, covered for 10 minutes.
