Turkey No-Taco Salad

Introduction

Number of Servings: 4

Ingredients

    1 lb 93% lean ground turkey
    1/2 Tbsp chili powder
    1 Tbsp onion powder
    1 Tbsp garlic powder
    1 tsp paprika
    1 tsp oregano
    1 C onions, chopped
    3 cloves garlic, minced
    8 C salad greens
    1 C corn
    4 C bell peppers, chopped
    1 avocado, diced
    8 Tbsp no sugar added salsa
    8 Tbsp fat free plain yogurt

Tips

I love this recipe because it allows you to play with ingredients. What do you want on your taco salad? Fresh tomatoes? Add those in! Cheese? Add that in! Black beans? Bring it on. This recipe is totally customizable. Just remember to alter the nutrition information for your altered recipe. ENJOY!


Directions

In a non-stick skillet, saute onions and garlic in a bit of water. Once they're semi-translucent, add the ground turkey. Add the seasonings and mix thoroughly until the meat is cooked. Remove from heat.

Mix the corn, bell peppers and avocado in with the turkey. Divide the mixture evenly into 4 servings.

Divide the salad greens among 4 plates (2 C each); Add a serving of the meat mixture to each salad. Top with 2 Tbsp salsa and 2 Tbsp fat free plain yogurt (or omit and remember to remove from nutrition!).
