Mediterranean Sauce

Introduction

Flavorful sauce to top fish, tofu, etc. Flavorful sauce to top fish, tofu, etc.
Number of Servings: 3

Ingredients



    1 Tbsp olive oil
    1/4 cup diced red onion
    2 cloves minced garlic
    1 pint of halved pear or cherry tomatoes
    2 tbsp chopped basil
    1 tbsp capers
    6 chopped kalamata olives
    1/4 cup pre-cooked corn

Directions

Heat 1 tbsp olive oil over medium-low heat then add onion - cook until softened. Add garlic and cook for approx 1 minute. Add tomatoes and basil and cook until tomatoes are soft. Add capers, kalamata olives and corn - cook for a few minutes more to warm up all ingredients.

Serving Size: Makes 3 servings
