Ingredients

    1 cup molasses
    2 T olive oil
    1/2 c boiling water
    1 c spelt flour
    1 t baking soda
    1/2 t ginger
    2 T cinnamon
    1/8 t salt
    1/2 t cloves

    Up to 4 c additional flour (nutrition data based on 5 cups total spelt flour)

Tips

Original text specified moderately hot oven. Various sources indicate 375 or 400 degrees


Directions

Mix molasses, oil and boiling water.
Sift dry ingredients. Add liquid. Add enough more flour (about 4 cups) to make a dough stiff enough to roll out. Cut and bake about 15 minutes at 400 degrees

Serving Size: 5 dozen cookies, 1 serving = 1 of 60 cookies
