Rice Flour Pancakes

Introduction

Number of Servings: 12

Ingredients

    2 c Rice Flour
    4 1/2 t double acting baking powder
    1 t salt
    2 T sugar
    2 c milk
    1 egg, slightly beaten
    1 T melted butter

Directions

1. Sift together flour, baking powder, salt
2. Wisk sugar, milk, egg, and butter. Then let batter rest for 5 minutes
3. Heat non-stick griddle or skillet to 375, lightly oil.
4. Ladle batter onto griddle to form desired size pancakes, cook until golden brown on each side; turning once.

Serving Size: Makes about 12 medium sized pancakes
