Sai's Pinapple Chicken Curry

Number of Servings: 9

Ingredients

    1 can lite coconut milk
    1 20 oz. can crushed pineapple
    1 20 oz. can pinapple chunks or tidbits
    2 large chicken boullion cubes
    1 tsp (or less if too spicy) curry paste
    Thai Basil (2 big handfuls)
    Cherry tomatoes (optional)
    Fish sauce (optional)

Directions

Pour 1/3 part of coconut milk in a pot and bring to boil. Stir in curry paste. Add chicken and boullion and stir until cooked. Add pineapple and remaining coconut milk. Stir in basil and tomatoes and serve.

Serving Size: Makes 9 cups.
