Very Simple Ginger Veggie Stir Fry

Introduction

Number of Servings: 2

Ingredients

    - 1 tbsp canola/olive oil

    - favorite mix of veggies

    - thumb-size amount of minced ginger

    - season with salt and pepper to taste

    - 1 tsp of corn starch and water( thickener)

    - to add protein: scramble in eggs, tofu, or any meat

Directions

1. pour canola oil in skillet and add ginger/garlic
2. add veggies and cook till ready
3. season with salt and pepper
4. mix starch and water in a bowl with your finger and while stirring, pour into pan
5. turn off heat and serve

Serving Size: 2 light meals or 4 side dishes
