Pumpkin Chili

Introduction

I saw this recipe in an HEB magazine - perfect fall goodness! This is a great meat free dish, but you could add some ground beef if you can't live without it :) I saw this recipe in an HEB magazine - perfect fall goodness! This is a great meat free dish, but you could add some ground beef if you can't live without it :)
Number of Servings: 6

Ingredients

    1 tbs EVOO
    1 medium onion, chopped
    1 bell pepper, chopped
    1 4 oz can diced Green Chile Peppers
    1 15.5 oz can Golden Hominy, drained
    1 garlic clove, minced
    1 14.5 oz can diced tomatoes
    1 15.5 oz can Red Kidney Beans, drained
    2 cups pumpkin puree
    2 cups Vegetable Broth
    2 tsp Chili powder
    2 tsp Cumin
    1/2 tsp black pepper
    1/4 tsp cayenne pepper
    salt if needed, to taste

Directions

Heat EVOO in skillet over medium heat
Saute onion, bell pepper, green chiles, hominy and garlic til tender, ~5 minutes
Stir in tomatoes, beans, pumpkin and veggie broth
Cook about 8 minutes and then season with chili powder, cumin, black pepper and cayenne pepper
Reduce heat and simmer for 20-25 minutes
Add salt to taste if you would like

Serving Size: 6
