Tofu Sugar Snap Stir Fry with Bok Choy and Egg Noodles

Ingredients

    3 tbsp tamari
    7 tbsp hoisin
    1 tsp red pepper
    6 cloves garlic
    2 t grated ginger

    1 block extra firm tofu
    1 bag (4.5 cups) great value sugar snap stir-fry
    1 small can bamboo shoots
    1 small can water chestnuts, sliced
    1 bunch bok choy (approx 7 cups shredded)

    5 individual egg noodle nests (blue dragon)

    1 t canola

Tips

Garnish with fresh mint or cilantro.

Add some sriracha or sambal for an extra kick!


Directions

Press the tofu to remove excess water. Cube. Brown in the canola oil on all sides in a pan over medium heat. Remove.

Bring water up to boil and cook the egg noodles as instructed.

Stir fry the bok choy for a couple minutes, then add a little water and steam for another minute. Remove from pan and set aside.

Add frozen veggies to pan. Just as they thaw and start to heat up, add the bamboo and water chestnuts. Add in the sauce mixture and cook until vegetables are cooked, but not mushy. Toss in the tofu and bok choy.

Portion out and serve over the noodles.

Serving Size: Makes 4 servings.
