Introduction

Number of Servings: 4

Ingredients

    1 pork tenderloin (about 1 pound) cut in pieces
    1 large onion, chopped
    1 package mushrooms, sliced
    125 ml chicken broth
    2 tbsp worcestershire sauce
    2 tsp paprika
    1 tsp dijon mustard
    1 tbsp fresh thyme
    1 tsp salt
    1-2 green bell peppers, cut in strips
    125 ml fat free sour cream
    125 ml fresh parsley, chopped
    black pepper to taste

Directions

1- Put about 1 tsp oil in pan (or PAM). Brown pork (med-high heat), about 5 to 6 minutes
2- Add onion, mushrooms, broth, worcestershire sauce, paprika, mustard, thyme and salt. Stir and bring to a boil. Reduce heat and cook for about 5 minutes.
3- Add peppers and cook for 2 minutes. Remove from heat.
4- Add sour cream and parsley.
5- Serve on egg noodles or orzo.

Serving Size: 4 1-cup servings
