Chicken and Broccoli

Ingredients

    2 chicken breast, skin and bones removed
    1 10 oz package of frozen broccoli, cooked
    1/2 of a yellow onion, sliced thinly
    2 garlic cloves, crushed
    1/2 tsp of grated ginger root
    2 tbsp of oyster sauce
    3 tbsp of soy sauce
    1/2 cup of julienned carrots

Directions

Cut the chicken in dice (small cubes). In a wok or frying pan, heat the olive oil over medium high heat with the garlic and ginger until fragrant (about 1 minute). Add the chicken and cook stirring constantly until done (about 5 minutes). Add the rest of the ingredients and stir constantly until flavors blend (about 2 minutes). This recipe makes 2 servings. Enjoy over brown rice or whole wheat pasta.
