Ingredients

1 Lg egg
2 Jennie-O Breakfast turkey sausage patties
1/2 cup frozen peppers and onion mix
1 Thomas Hearty Muffins Multi-grain
1/8 cup of Shredded Cheddar cheese
* Optional - Tomato slices
Tips
* If you want you can cut up the sausage and add it back into the mix before pouring the beaten egg over the vegetables.
* Can use other vegetables
Directions
Fry sausage patties in non-stick skillet with a little cooking spray. Cook til done.
Set cooked sausage aside, add about 1/2 cup of frozen peppers and onions to skillet (add a little more cooking spray if needed). Cook about 3-5 minutes until lightly brown.
While pepper mixture is cooking, pop muffin into toaster and beat egg with a little salt and pepper.
Next you will make an omelet with the vegetables and beaten egg. When vegetables are tender, pour beaten egg over all and cook for a minute until bottom is set. Flip and finish cooking on other side. When set, place sausage patties on muffin, top with egg and a slice to tomato if you like.
