Slow cooker baked beans with garlic

Submitted by: SELCHIE9

Introduction

Dried beans are cooked in a slow cooker with a subtle barbecue sauce overnight. This makes a great vegan main dish or side dish. Dried beans are cooked in a slow cooker with a subtle barbecue sauce overnight. This makes a great vegan main dish or side dish.

Ingredients

    4c dried beans
    1 can beer
    1tbsp canola oil
    1onion, chopped
    1tbsp sugar
    3 cloves garlic, diced
    1.5 tbsp molasses
    0.25c tomato paste
    1 bay leaf
    1tsp dried sage
    1tsp dried rosemary
    1tsp salt (or to taste)
    1tbsp cider vinegar
    water

Directions

Rinse the beans and add them to the slow cooker with enough water to cover them by about two inches. Leave at least overnight.

The next day: mix the oil, onion, and sugar in a pan. Heat at medium high until the onion starts to brown, stirring regularly, then lower to medium low and cook until the onions turn golden brown, about 20 minutes. Watch carefully to make sure the onions don't burn. You can skip this step, but I think it adds depth to the flavour.

Meanwhile, drain the beans and add all other ingredients. Add enough water to cover the beans. Add the onions when ready and mix. Heat in the slow cooker on "High" for two hours, then turn on low and leave overnight, or about 8 hours.

Makes about 7 one-cup servings for a main dish, or 14 half cup servings for a side dish.
