Banana Coconut Baked Oatmeal

Ingredients

    1 cup old fashioned rolled oats
    1/2 cup chopped walnuts
    1/2 teaspoon ground cinnamon
    1/4 teaspoon nutmeg
    1/4 teaspoon baking powder
    Pinch of salt
    1 cup almond milk
    1/3 cup mashed ripe banana (about 1 medium banana)
    1/2 teaspoon pure vanilla extract
    1 tablespoon ground flaxseed
    3 tablespoons water
    2 tablespoons unsweetened shredded coconut
    1 tablespoon organic pure maple syrup

Directions

1. Preheat oven to 350F. Lightly butter three ramekins.

2. In a medium bowl, whisk together flaxseed and 3 tablespoons warm water. Let sit for 5 minutes. In a small mixing bowl, mix together oats, walnuts, cinnamon, nutmeg, baking powder and salt.

3. Whisk the milk, syrup, mashed banana, coconut and vanilla extract into the bowl with the flax eed mixture. Pour dry ingredients into wet and stir until combined. Pour mixture into prepared bowl ramekins. Top each with a few walnut pieces.

4. Bake for 25 minutes, or until oatmeal is puffed and set.

Serving Size: Makes 3 individual servings.
