Ingredients

    1 Cup Barley Soup (uncooked)
    1 Bag Frozen Stir Fry Vegetables
    5 small Red Potatoes
    1 box Vegetable Cooking Stock, unsalted (4 cup)
    3 cup fresh chopped Kale
    1/2 bag frozen broccoli
    5 TBSP Less Sodium Soy Sauce
    1/2 package Tofu (7oz)
    1 TBSP Sesame Oil
    3 Cup Water

Tips

Topping it with garlic salt adds a nice flavor.


Directions

Peel Red potatoes and cube.
Put 3 cups water and 1 cup vegetable stock into large pot. Bring to boil.
Add barley and potatoes, reduce heat to medium. Allow to cook for 10-15 minutes, then start tofu while pot continues to cook.
Drain and cube tofu. Bring sesame oil to high temperature in sauce pan and add tofu. Cook until tofu browns on the outside. (this takes approximately 10-15 minutes).
Add cooked tofu, bag of stir fry vegetables, and frozen broccoli to pot. Pour any remaining sesame oil into pot.
Add the remaining vegetable stock and soy sauce.
Bring back to a boil, then reduce heat to medium and allow to cook for another 10 minutes, stirring occasionally.
Remove from heat, then stir in kale. Allow to sit for another 10 minutes removed from heat before serving.

Serving Size: Makes 8 Large Bowls (Roughly 2 cups per Bowl)
