Almond Mini Muffins

Introduction

Ingredients

    1/3 cup whole wheat flour
    1 scoop plant protien
    1/4 cup chopped toasted almonds
    1/2 tsp baking powder
    1/8 tsp baking soda
    1/8 tsp salt
    1/8 tsp nutmeg
    1 egg
    1/4 cup applesauce
    1/2 tsp almond extract
    2 Tbsp coconut palm sugar
    2 Tbsp melted coconut oil

Directions

Place flour, protein powder, almonds, baking powder, baking soda, salt and nutmeg in large bowl and combine. In a small bowl mix egg, milk, almond extract, applesauce, oil and brown sugar. Pour into dry ingredients. Stir until just moist. Add 1 Tbsp water if the mixture seems too stiff. Preheat oven to 400
Spray mini muffin tins, pour batter into each cup filling 3/4 full. Bake 7-10 mins until done.
