Creamy Pumpkin Pie Oatmeal

Introduction

Ingredients
-
1/4-1/2 cup canned pumpkin (not the pie mix)
1/2 cup lowfat cottage cheese
1/4 cup quick cook oats
1/8-1/3 cup water
Spices-
vanilla- about 1 tsp
Cinnamon and ginger, or pumpkin pie spice- about 1/2 T
Splenda or brown sugar to sweeten if needed (I add 3 packets splenda personally)
Tips
Add another 1/4 cup oatmeal if you can afford the carb room
Directions
put everything into a bowl and mix well
add some water, may take trial and error to find your prefered oatmeal thickness
Microwave 1:30-2:00 minutes on high
Serving Size: Makes one good bowl.

This was good, I think it would have been better for me if I added brown sugar like it said, but did not have that so used agave. I am also a picky eater and do not care for cottage cheese, but it was good and I will make it again. - 10/24/12

Thanks for the rating! I find that unless you're a big fan of the genuine pumpkin taste it needs a little sweetness added. Most like their fall sweets with a pumpkin hint to them, rather than the full flavor. I personally add 2 packets of the splenda packets normally for coffee.
