SPINACH ENCHILADAS

Number of Servings: 8

Ingredients

    8-10 Flour tortillas
    1 1/2 c. Monterey Jack Cheese
    6 green onions (chopped)
    SAUCE:
    8 oz. sour cream
    1 can cream of chicken soup
    1/2 bud of garlic
    1 small pkg. frozen chopped SPINACH (partially thawed)
    2-3 canned jalapeno chilies (or green chillies)


Directions

Puree all the sauce ingredients in blender. Pour a little of the sauce in the casserole dish. Roll cheese and little onions in each tortilla & put rolled tortillas in casserole. Pour remaining sauce over the tortillas. Bake at 350 degrees 30-40 minutes or until the cheese melts.

Serving Size: Each rolled tortilla is a serving
