Stuffed Piquillo Peppers

Ingredients

    1/2 small onion, choppped
    1 garlic clove
    pinch of red pepper flakes
    1 lb. chorizo
    3/4 c bread crumbs
    2 cups Manchego Cheese
    1/2 bunch parsley, chopped
    2 10oz jars Piquillo Peppers, drained & patted dry

    **Had to add the closets thing to a piquillo when entering recipe because there was no Piquillo -

Tips

You can turn this recipe into a mean by adding rice, black beans and corn and stuffing into a poblano or red bell pepper.


Directions

Cook Chorizo and remove from pan, sautee onion in grease from chorizo till soft(a little olive oil may be needed), add red pepper flakes and garlic and saute 2 more minutes. Remove from heat and add bread crumbs and let cool. Add Cheese, mix and stuff into peppers. Bake 8-10 minutes.
