Introduction

I love to make up a big pot of this the first of the week and eat on it all week long as a main course or a side dish. It is very filling with a few crackers and great as a side with meat of choice. Number of Servings: 10

Ingredients

    Olive Oil, 1 tbsp
    Carrots, raw, 15 medium Baby or two large - chopped
    Onions, 1 large - chopped
    Summer Squash, 1 medium - chopped
    Zuchinni Squash 1 medium - chopped
    Broccoli, fresh, .5 cup, chopped
    1 can Green Beans
    1 can Green Peas
    Petite Cut Diced Tomatoes, 1 can
    Pepper, black, 1 tbsp
    Mrs. Dash (R) Garlic & Herb Seasoning Blend, 1 tbsp
    Worchestershire Sauce, .5 tsp

Tips

I love to add chicken or beef to this. One chicken breast or one steak cut is enough for the whole pot. This soup gets better with age.


Directions

In large pan, coat bottom with olive oil. Gradually add chopped veggies to saute. Before onions are tender, add canned goods and seasonings. Let cook to a good boil. Serve as main dish or side.
