Greek yogurt Oven fried chicken

Introduction

This chicken is briefly marinated in plain Greek yogurt and dijon mustard for crunch and juicy dinner. This chicken is briefly marinated in plain Greek yogurt and dijon mustard for crunch and juicy dinner.
Number of Servings: 4

Ingredients

    Chicken Breast, no skin, 3 breasts about 5 oz each
    Oikos Organic Greek Yogurt, Plain (1 tbs)
    *Grey Poupon Dijon Mustard, 3 tsp
    *Cornflakes- Kellogs, 1 cup (finely crushed)
    Kellogg's All-Bran Cereal, 0.37 cup (1 serving) (finely crushed)
    Garlic powder, .5 tsp
    *Onion powder, .5 tsp

Directions

1. In food processor, grind corn flakes and All Bran cereal until finely ground. Add garlic powder, onion powder and if you like Italian herb seasoning.
2. Mix yogurt and mustard in a separate bowl.
3. Pat chicken breast dry. Season with salt and pepper and brush with yogurt mixture.
4. Dip chicken in crumb mixture and coat well.
5. Chill in fridge for 10 minutes - 1 hour before cooking to let crust set.
6. Spray top side of chicken with oil mister or Pam.
7. Bake 375 oven (oil side up) for 20. Gently turn over, spray with mister or Pam on other side and bake another 10 minutes.

Serving Size: 4 (3 oz) pieces of crispy chicken
