Veggie Lover's Soup

Ingredients

    1 tablespoon extra-virgin olive oil
    1 medium carrot, peeled and diced into inch pieces
    1 celery stalk, diced into inch pieces
    1 small zucchini, diced into inch pieces
    1 shallot, finely chopped
    tablespoon salt-free Italian seasoning blend
    2 plum tomatoes, chopped
    1 14 oz. can low-sodium kidney beans, drained
    3 cups reduced-sodium chicken broth
    cup whole-wheat elbow pasta
    2 cups packed baby spinach

Directions

Instructions
Heat oil in a large saucepan over medium-high heat. Add diced carrot and celery and cook until they begin to soften, about 4 minutes.

Add zucchini, shallot and seasoning blend and cook, stirring often, until vegetables are tender, another 2-3 minutes.

Add tomatoes, beans, broth and pasta and cook until pasta is tender, about 8 minutes.

Stir in baby spinach and cook, stirring, until spinach is wilted, about 1 minute.

Add a pinch of salt to taste


Serving Size: makes 5 1-cup servings
