1 lb Shrimp - size of choice
1 onion, chopped
3 cloves garlic, minced
2 Tbsp olive oil
approx 10 dried red chile, arbol or chinese, ground
Use less chile if you don't like spicy food.
I cover after shrimp is done and leave on low heat so that there is some sauce to serve with the shrimp over rice.
Add olive oil, onion, and garlic to chiles and saute until onions start to soften.
Add shrimp and cook over med heat, stirring often until they are opaque in color. Don't over cook or they will be chewy.
Serving Size: makes 6 1/2 cup servings
