Easy Chicken Tostadas

Introduction

Recipe from oldwayspt.org. I used rotisserie chicken from Walmart. Pull off the white meat. You can also mix another tbsp of lime juice with fat free plain yogurt as a sub for sour cream - but I didn't think these needed sour cream anyway. They do go great with guacamole ... I had some leftovers of the chicken mixture and added black beans and guac then threw all of it in a whole grain wrap for lunch. Fantabulous! Recipe from oldwayspt.org. Ingredients

    2 cups cooked shredded chicken
    3 tablespoons lime juice
    1 tablespoon olive oil
    1/2 teaspoon ground cumin
    4 tablespoons chopped cilantro
    2 scallions, chopped
    6 fresh corn tortillas
    Cooking spray
    Other suggested accompaniments: chopped tomatoes, fresh salsa, guacamole, queso fresca

Directions

1.Preheat oven to 425. Place tortillas on a cookie sheet and spray lightly with cooking spray, and place in oven.

2.Meanwhile, place chicken in a medium sized bowl. Whisk together 3 tablespoons of the lime juice with the olive oil, cumin and cilantro. Pour this mixture over the chicken in the medium bowl, tossing with fork to distribute.

3.Remove tortillas from oven when brown, about 7-9 minutes. Top each one with some of the chicken mixture - enough to cover the tortilla in a small layer. Top with chopped scallions.


Serving Size: 6 servings - and you'll probably have about serving of the chicken mixture leftover.
