Kale Lentil Soup

Introduction

Ingredients

    1 large onion
    4 carrots
    4 tbs olive oil
    1 lb lentils
    8 cups water
    2 cans chicken broth or vegetable broth
    (this recipe is calculated for chicken broth)
    2 tsp salt
    4 tsp ground cumin
    2 tsp ground cinnamon
    4 cups chopped fresh kale
    1 can diced tomatoes

Tips

For vegetarian use vegetable broth instead of chicken. Add more or less salt for taste.


Directions

Clean and sort lentils and add to crock pot with salt and water. Leave in crock pot on low for 4 hrs. Dice carrots and onion and saute in 4 tbsp olive oil until carrots get partially soft and onions are transulent. Add to crock pot of lentils. Add cumin and cinnamon and stir. Add kale and diced tomatoes and cook for another 2 hrs on low.
