Ingredients

    3 lbs pie pumpkins whole ( 670 grams cooked with flesh removed) roasted and chunked
    16 oz ground beef, cooked and rinsed
    28 oz crushed tomatoes
    28 oz whole stewed tomatoes
    .5 cup dried black beans
    .5 cup dried northern beans
    . 5 cup dried small red beans
    Salt and peper to taste
    1 tbs chili powder
    1 tbs paprika
    1 tsp cumin
    1 tsp coriander
    .5 tsp cinnamon
    1 tsp oregano

Directions

Rinse all the beans, cook in 6 cup water about 3 hours till tender, drain.meanwhile
Cut pumpkin in half, remove seeds, add a touch of oil and salt, roast in 400 oven cut side down 20 min till tender, let cool
Cook and rinse ground beef to remove fat.
Add oil to stock pan, saut onion till tender, add stewed tomatoes with juices from can and reduce liquid on med high till it is thick
Add all other ingredients, simmer 1 hour to combine favors
