Rice Pilaf

Introduction

A grat tasting side dish to go with chicken or beef. A grat tasting side dish to go with chicken or beef.
Number of Servings: 6

Ingredients

    6 green onions, sliced
    4 cloves garlic
    1 cup uncooked brown rice
    8 oz. fresh mushrooms
    1 Tsp. dried parsley
    1 tsp. Italian seasoning
    1 Tsp. olive oil
    4 cups chicken or beef broth; low sodium

Directions

Wipe mushrooms with damp paper towels and slice; mince garlic and finely chop onion. Heat oil in a nonstick saucepan on medium heat, and saute' onion and garlic until soft, about 5 minutes; be careful not to burn. Adjust heat to medium-high, add broth and parsley; bring to boil. Add rice, return to boil, then reduce heat to medium; add mushrooms, stir and cover. Simmer 15 - 20 minutes, or until rice is tender and water is absorbed. Remove from heat and let stand, covered, another 5 minutes and serve.
