Ingredients

    1 C COOKED PASTA
    1 TBS CHOPPED FRESH PARSLEY
    4 ARTICHOKE HEARTS (PACKED IN WATER)
    6 OLIVES
    6 CHERRY TOMATOES
    2 TBS CHOPPED RED PEPPER
    1/4 C CHOPPED FRESH SPINACHE
    1 TBS OLIVE OIL
    1/4 TSP DRIED BASIL
    dash of salt
    1/8 TSP DRIED OREGANO

Directions

Cook your favorite pasta shape in boiling lightly salted water til al dente (for most pasta this will be about 7 minutes)
While Pasta boils,
cut the artichoke hearts, cherry tomatoes, olives into halves.
Thinly slice spinache producing thin julienne strips.
Add Basil, Oregano, and dash of salt to the Olive oil.
Mix all ingredients together-Enjoy a salad or side dish protion.
This recipe multiplies easily for more portions.
