1 cup old fashioned oats 2/3 cup unsweetened coconut flakes (raw or toasted) 1/2 cup natural peanut butter (almond, cashew,sunflower seed or other nut butter may be substituted) 1/2 cup flax meal or ground flax seeds 1/3 cup honey (Agave may be substituted) 2 Tbs chopped dried cherries or other dried fruit 1 Tbs cacao nibs 2 Tbs Sunflower seeds or hemp seeds 2 tsp chia seeds 1 tsp vanilla extract dash of cinnamon
Place all ingredients in a mixing bowl and stir until completely mixed. Place bowl in refrigerator and allow to chill for 30 minutes. Once chilled,scoop the batter out and roll into balls (if dough is crumbly add a little extra honey or nut butter. Store in airtight container in refrigerator for up to one week.
