Introduction

This is a great replacement for bread a nice size serving has 100 calories. This is a great replacement for bread a nice size serving has 100 calories.
Number of Servings: 8

Ingredients

    1 cup yellow corn meal
    2 cups water
    3 tbsp butter
    3 eggs
    1 tsp salt
    1 cup milk (you can use skim)

Directions

boil water and salt and slowly add corn meal stirring constantly until mixtue is thick (like cream of wheat). Add butter and stir until butter is fully melted and incorporated. Let cool slightly. Beat eggs and milk together in a large bowl and slowly add corn meal mixture. The batter will be lose and slightly lumpy. pour into a greased souffle or cassarole dish and bake for 30-40 minutes until golden brown on top. Serve hot as a side with any meal. This stores and reheats well.
