JoAnne's Beef Stew

Ingredients

    Cooking Spray
    1.5 lbs. beef stew meat (chuck)
    1 Envelope Lipton Onion/Mushroom Soup
    1 can stewed tomatoes
    1 can diced tomates
    1 cup water
    2 tsp. chili powder
    2 medium carrots, thickly sliced
    2 medium potates, diced
    1/4 cup flour mixed with about 1/2 cup water (used to thicken at end of cooking time)
    Salt and pepper to taste.

Directions

In a large skillet covered with cooking spray, brown beef. Add soup, tomatoes, water, chili powder. Cook uncovered 30 minutes. Add potatoes, carrots and cook covered 45 minutes or until veggies are tender. Slowly stir in flour and water mixture to thicken.

Serving Size: Makes 8 servings
