Ingredients

    SAUCE
    1 1/2 cups canned light Apricots, drained
    2 tblspn Lime Juice
    2 tblspn Thai Sweet Chilli Sauce
    2 tblspn Cilantro (Coriander) chopped

    KEBABS
    500 grams Chicken Breast, cubed
    1 large Red Bell Pepper, cut into squares
    1 large Green Bell Pepper, cut into squares
    1 tblspn Olive Oil
    2 tblspn Lime Juice
    1 clove Garlic, crushed

Directions

Mix together the Olive Oil, Lime juice and Garlic clove and marinate the chicken for at least 30 minutes.
Meanwhile place the sauce ingredients except the cilantro into a blender and process until smooth, place into a saucepan and cook until heated through.
Thread the chicken and the bell peppers onto skewers and broil (grill) or BBQ until cooked.
Serve with the sauce
