Potatoes and Ham Au Gratin

Introduction

A healthier version of a cold weather classic with a twist. A healthier version of a cold weather classic with a twist.
Number of Servings: 8

Ingredients

    2 cups extra-lean diced ham
    4 med potatoes, diced
    1/2 white onion, chopped
    1/2 medium red bell pepper, chopped (optional)
    1 cup skim milk
    1.5 cups low sodium chicken broth
    3 tbsp. whole wheat flour
    3/4 cup shredded 2% cheddar cheese
    2 tbsp. bread crumbs

Directions

Preheat oven to 400 degrees.
In 2.5 qt casserole add, diced potatoes and ham.
Saute onion and bell pepper in nonstick skillet until tender. Add a small amount of chicken broth and flour to make a roux. Slowly add rest of chicken broth and milk. Stir until it starts to thicken. Remove from heat. Pour over potatoes and ham. Top with cheese and bread crumbs. Bake in 400 degree oven for 35 minutes or until potatoes are cooked through. (depends on size of "diced" everyone is different.)

    I found the end result to be a bit watery. Very tasty though. I think I will tweek it next time so it is a bit thicker. The potatoes weren't quite cooked through, so I think they may need precooking. - 1/8/10

    I made this for me and my mom last night, I just cut the recipe in half of course. I had one portion and so did she and then another one, and then the last one. So she ate 3/4 fourths of it. Haha. It's good, definately worth it. Left out the breadcrumbs. And I used slices of ham instead of chunks. - 8/17/09

    My family loved this recipe. I used slightly more milk and just water instead of broth. I did not use bread crumbs. I sauted my onion with some sweet corn. I added a sprinkle of salt to the roux, but this was not needed. It was plenty salty enough. Took longer to cook through. - 2/13/10

  • Tasted very good, but as others have said, was quite watery. The bread crumbs got soggy. I wonder if white flour would thicken it better. We all really enjoyed the taste. Had to cook it longer to get the potatoes soft. - 2/2/13

  • I loved this recipe! The red bell peppers added such a nice flavor to the sauce. It was easy to half the recipe to make 4 servings, too. Delicious! Great with green beans. - 1/15/12

  • This is a good recepie to add veggies too. I use broccoli or corn, add mushrooms. Even green beans with mushrooms. And definitely more seasonings. A little pepper flakes spices it up.
    If you don't want to use ham because of the sodium, use chicken. Or even cubed pork. It's all good. - 1/12/12

  • I really enjoyed this recipe but my family thought it was a little bland even though I added vegetable seasoning and greek seasoning. However, the next day, it was much better. The flavours blended nicely and it had much more flavour. Perhaps this recipe is best done the night before - 9/30/11

  • Very good. Great flavor, could use some pepper & herbs. I added 12oz bag of mixed veggies and cooked about 45 min. Let set for 10 min out of the oven and it will not be soupy. I'd probably use reg flour in the future or cornstarch for the thickening though. Great recipe! - 5/4/11

  • This is the 2nd time I'll be making it for dinner. It's a great thing to make when nothing is thawed for supper. My first try had a little more liquid than I wanted so I'll cut the broth in half and I'll add some veggies this time. It's a great change from turkey, chicken and fish all the time. - 5/13/09

  • I'll make this again. I added broccoli and had to increase the liquid amount for cooking. It ended up not thick enough, but that was probably my fault... The broccoli made it. Next time I'll use fewer potatoes. - 1/10/09
