Comforting Bean, Chicken, Ham Soup

Introduction

Number of Servings: 8

Ingredients

    2.5 cups dried bean mix (I used white, pinto, gigantes, black-eyed peas, lentils, and split peas)
    1 tsp thyme
    2 bay leaves
    1 ham hock (or a couple of strips of bacon or some ham rind)
    2 cans chopped tomatoes
    2 large onions, chopped
    4 ribs celery, diced
    1 carrot, diced
    1 cup diced lean ham
    2 chicken thighs and 1 drumstick

Tips

Eat some and freeze the rest!


Directions

soak beans overnight (I didn't soak the lentils and split peas) then rinse and put into a large dutch oven or stock pot. Add 3 quarts of water, thyme, bay leaves, ham hock/bacon. Simmer covered for 3 hours. Add veggies and simmer another 1.5 hours uncovered. Add ham (or sausage) and whole pieces of raw chicken (skin removed). Simmer until chicken is tender-- at least another 1.5 hours. Remove chicken, shred meat and return to pot. Add salt and pepper to taste.

Serving Size: makes about 8 good bowls of soup (about a gallon)
