Olive Oil, 2 tbsp
Onions, chopped raw, 1 medium (2-1/2" dia)
Garlic, 3 clove chopped
Cumin ground, 1 tsp
Chipotle Pepper, 1 or 2 peppers, chopped
Pumpkin, canned, without salt, 6 cup
Herb0x Chicken Broth or Bouillon, 4 cup
Lime Juice, 2 TBS
Oregano, ground, .5 tbsp (
No Salt, 2 tsp
Add pumpkin, stock, oregano and salt. Bring to a simmer, reduce heat and simmer for 20 minutes, partially covered.
remove stock and puree in small batches. Return soup to pot and reheat.
Add lime juice, Adjust seasonings if desired. Add more stock if soup is too thick.
Top with sour cream (not included in ingedients).
