Beef Stew

Ingredients

    2.5 lb bottom round beef roast, trimmed and cubed
    2 Tbsp white whole wheat flour
    1 Tbsp Emerill's Original Essence Seasoning Blend
    1 Tbsp olive oil
    1 cup chopped onion
    4 cups beef broth (4 cubes in 4 cups water)
    6 cups new potatoes, halved or quartered with skin on
    2 cups baby carrots, cut in half
    salt/pepper to taste

Directions

Trim and cut beef roast into 1inch cubes. Mix flour and seasoning and toss beef cubes in flour mix. Brown meat in batches in olive oil in a cast iron dutch oven set to high heat. Cook onion in dutch oven until soft. Return meat to dutch oven. Add broth. Cook 1-1 1/2 hours until meat is almost tender. Add potatoes and carrrots and cook another 30 minutes until veggies are tender.
