IntroductionI can't have rice, so I had to be a bit more creative to have sushi again. I can't have rice, so I had to be a bit more creative to have sushi again.
2 oz smoked salmon cut into strips
2 cups shredded cauliflower, steamed for 5 minutes with a bit of water
1 tsp unflavored gelatin
1 cup grated carrots
1/2 cucumber, seeded and sliced into strips
2 Tbsp Cider vinegar
2 sheets nori
4 Tbsp Soy Sauce substitute
wasabi powder (optional)
Place sheet of nori on work surface first. place "rice" on sheet going about half way up. Add carrot and about 8 of the cucumber slices. Add a few pieces of the smoked salmon and roll. Makes 24 pieces. Use soy sauce substitute for dipping.
