Ingredients

    Egg, fresh, 8 large
    *bacon raw, 1/4 package (4.5 ounces)
    Onions, raw, .5 cup, chopped
    Mushrooms, fresh sliced , 8 ounces, about 2 cups
    Zucchini, 1 medium (about 2 cups), cubed
    Celery, raw, 1 cup, diced
    *Broccoli Slaw, 6 oz
    egg white, fresh, 8 large (use what's left from making ice cream custard)

Directions

Cut bacon into small pieces, begin to saute'. Add all remaining veggies and saute' until well wilted.
Add eggs; cook until bottom is slightly set. Bake at 375 degrees until set, firm, golden-brown.
