Beef Stroganoff Topper (no noodles!)

Introduction

Number of Servings: 8

Ingredients

    2 lbs beef round steak, diced
    3 tbsp canola oil
    2 10-oz bags (or 20oz) fresh mushrooms, sliced
    1 medium shallot, diced fine
    1 large onion, diced
    1/2 tsp salt
    1/4 tsp black pepper
    4 ounces red wine
    1 cup low-sodium beef broth
    1 tbsp dijon mustard
    2/3 cup low-fat sour cream

Tips

This also works well on top of cornbread, or on a piece of toast, instead of noodles or rice. Haven't tried it on spaghetti squash yet, but that's in the works.


Directions

1. Sprinkle the beef with 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper. Heat 2 teaspoons of the oil in a 12-inch nonstick skillet over medium-high heat. Add the beef and cook, stirring occasionally, until browned and cooked through, about 4 minutes. Transfer the beef to a plate.

2. Heat the remaining 1 teaspoon oil in the same skillet over medium-high heat. Add the mushrooms and the remaining 1/2 teaspoon salt and 1/8 teaspoon pepper; cook, stirring occasionally, until the mushrooms start to release their liquid, about 1 minute. Add the shallot; cook, stirring occasionally, until the shallot is softened and the mushrooms are browned, about 3 minutes. Stir in the broth and wine and bring to a boil. Cook until the mixture is reduced by about one-half, about 6 minutes.

3 Stir in the beef and cook until heated through, about 1 minute. Remove the skillet from the heat; stir in the sour cream and mustard. Serve at once.

Serving Size: Makes 8 servings!
