Ingredients
Ingredients:
*Whole Wheat Flour, 1.25 cup (remove)
Baking Powder, 1 tsp (remove)
Baking Soda, 0.5 tsp (remove)
Ground Cinnamon, 1 tsp.
Instant, Quick, and Regular Oats Cereal, 1 cup, cooked (remove)
**Flax Seed, 1/4 cup (remove)
Applesauce, unsweetened, 2/3 cup (remove)
Milk, nonfat (skim milk), 1/3 cup (remove)
Molasses, 0.25 cup (remove)
Brown Sugar, 0.25 cup, packed (remove)
*Canola Oil, 2 tbsp (remove)
egg white, fresh, 1 large (remove)
Carrots, raw, 1.5 cup, grated (remove)
Prunes, dried, 1/2 cup, pitted and chopped.(remove)
Walnuts, 0.5 cup, chopped (remove)

Directions
n a large bowl, mix dry ingredients.
In Medium bowl mix wet incredients, brown sugar, egg, carrots, prunes and walnuts. Mix until just blended. Scoop into muffin tin, prepared with paper cups, or sprayed with cooking spray. (I do both, cups sprayed with cooking spray). These cups will be very full. Bake at 400 for about 20 - 25 minutes, or until a toothpick comes out clean. Makes a baker's dozen.
