Introduction

This colorful dish will bring a splash to any brunch. This colorful dish will bring a splash to any brunch.

Ingredients

    3 large summer squash
    1 medium red pepper
    1 medium green pepper
    2 cups liquid egg substitute
    2 cups shredded lowfat cheddar cheese

Directions

Chop all vegetables.
Saute' in pan sprayed with cooking spray.
Put in 8X8" or 9X9" baking pan that has been sprayed with cooking spray.
Poor egg substitute over mixture. Sprinkle cheese on top. Bake at 350 degrees for 50-60 minutes until knife come out clean.
