Broccoli Cheddar Soup

Ingredients

    1 tbl chopped onions
    5 oz frozen broccoli
    1 cup soy milk
    1 cup Pacific Natural Foods Organic Vegetable Broth
    1 tbl margerine
    1 oz cheddar or colby low fat cheese
    1 tbl corn starch

Directions

Makes 2 one cup servings.
Saute onions in margerine.
Add vegetable broth, frozen broccoli.
Cook until soft.
Puree.
Add soy milk and cheese.
Add 1 tbls cornstarch mixed with water to thicken
Cook for approximately 20 minutes.
Salt & Pepper to taste
