Oatmeal Breakfast Cookie

Introduction

A delicious gluten free breakfast on the go. Quick to prepare and they last all week. A delicious gluten free breakfast on the go. Quick to prepare and they last all week.
Number of Servings: 14

Ingredients

    Oats, 2 cup (remove)
    Banana, fresh, 2 medium (7" to 7-7/8" long) (remove)
    **Flax Seed Meal (ground flax), 2 tbsp (remove)
    Honey, 2 tbsp (remove)
    Blueberries, fresh, 1 cup (remove)
    Egg, fresh, 1 large (remove)
    Coconut Oil, .25 cup (remove)
    Coconut, raw, 1 cup, shredded (remove)

Tips

Mix it up with different berries or nuts. I've added some vanilla or cinnamon to some batches as well with great results.


Directions

Preheat oven to 350 degrees. Mix dry ingredients in large bowl. Mash banana and add wet ingrideients in a seperate bowl. Combine and add blueberries blending well. Shape into mounded cookies and bake until golden brown (15-20 minutes).

Serving Size: makes 12-14 cookies
