Cheater's Spaghetti Bake

Introduction

Ingredients

    *Spaghetti/Marinara Sauce (tomato sauce), 2.5 cup
    *Turkey, Ground turkey, 93% lean, 16 oz
    Onions, raw, 1 small
    Garlic, 2 cloves
    *Trader Joe's Brown Rice Spaghetti Pasta, 4 cup
    *2% Mozzerella, 1 cup
    Gouda Cheese, 2 oz

Tips

Swap the turkey for spicy Italian sausage. The gouda was lurking in my fridge, taunting me, so it became a fancy ingredient for the first round. Chopping up tomatoes or squash or zucchini are great ways to hide veggies for little ones. For a different spin on a similar idea, spaghetti squash are a great substitute for noodles too. Packaging individual portions to freeze works really well for the person on the go.

Directions

Cook pasta according to directions on package. Preheat oven to 350 and spray 9x13 casserole pan. While pasta is cooking, saute chopped onion and garlic until soft (5 minutes) add in ground turkey, cook through. While cooking add in desired spices (I use oregano, basil, chives, black pepper and sriacha like its going out of style). Drain the meat. Mix in pasta sauce (I had the better part of a jar in my fridge from making pizza for a party earlier in the week, hence this recipe). Once pasta is cooked and drained, toss with sauce to coat. Pour half of the pasta into casserole dish, layer in gouda and some of the mozzarella. Cover with remaining pasta and then rest of cheese. Pop in the oven for 20 minutes and voila!

Serving Size: makes 9-12 good sized portions.
