Vegetarian Tortilla Soup

Ingredients

    2 T olive oil
    2 red bell peppers, sliced
    1/2 yellow onion diced
    2 cloves garlic minced
    3 T cumin
    28 oz can crushed tomatoes
    2 - 4 oz cans chopped green chilies
    32 oz package of vegetable broth
    15 oz can whole kernel corn

Directions

Heat olive oil in skillet. Add peppers and onion. Cook 5 minutes, stirring occasionally. Add garlic and cumin. Cook an additional 2 minutes. Add corn. Cook an additional 5 minutes. Season with salt and pepper.

Optional: add avocado slice before serving

Serving Size: Makes at least 10 servings
