Curried Chicken & Rice

    2 c brown rice
    4 T light butter
    10 chicken thighs
    8 cloves garlic
    1 T curry powder
    1/2 t ground ginger
    2 T tomato paste
    2 c chicken broth
    2 t cornstarch
    2 T water


Cook rice according to pkg directions. While rice is cooking, heat butter in large skillet. Add chicken and brown on all sides. Remove from pan. Add garlic and curry powder to pan. Cook, stirring occasionally for 5 minutes. Add ginger, tomato paste, and broth. Return chicken to pan, cover and simmer 30-40 min. Combine cornstarch and water to make paste. Whisk cornstarch into sauce and continue to cook to desired consistency. Place rice in bowls, top with chicken and sauce.
