Lactose Free Pumpkin Custard

Ingredients

    1-15 ounce canned pumpkin
    1 large egg
    1 large egg white
    .25 cup plain soy milk
    1 tsp pumpkin pie spice
    6 dates seeded
    1 tsp stevia powder
    7 ounces silken tofu
    .25 cup applesauce, unsweetened

Directions

Mix pumpkin, soy milk, tofu, applesauce, egg, and egg white thoroughly in a mixer. Add the ground dates, stevia, and pumpkin pie spice into the pumpkin mixture and mix in well. Pour the mix into a sprayed (vegetable spray) 8 or 9 inch pan. Bake at 350F for about 45 minutes or until a toothpick can be pulled clean from the custard.
