Dairy and Gluten Free Chocolate Tarts

Introduction

Free of dairy and gluten, and low carb/glycemic, these treats are plenty tasty! Free of dairy and gluten, and low carb/glycemic, these treats are plenty tasty!
Number of Servings: 4

Ingredients

    1/2 cup almond flour
    1.5 tbsp plus 1/4 cup cocoa
    1.5 tbsp plus 1/4 cup coconut oil
    1.5 tsp plus 1 tbsp coconut nectar
    1/4 tsp instant coffee powder (optional)
    1/8 tsp vanilla
    pinch of salt

Directions

Combine almond flour, 1.5 tbsp cocoa, 1.5 tbsp coconut oil, and 1.5 tsp coconut nectar in small bowl. Divide evenly among four mini (2x3") tart pans. Bake at 350 for 8 - 10 minutes.
Meanwhile, to make the filling, combine remaining cocoa, coconut oil, and coconut nectar with the coffee powder (if using), vanilla, and salt. Right before removing the tart pans from the oven, dip the bowl holding the filling in a small pan of hot water to liquify it (this will make your tarts look more glossy on top!) Remove the tart pans from the oven, allow to cool 2 or 3 minutes, then pour the filling into the crusts. Allow to cool at room temperature for 10 minutes, then refrigerate. 10 minutes prior to serving, remove the tarts from the refrigerator.
