Introduction

Whether you need a light start or a quick snack, these cucumber bites are perfect. Whether you need a light start or a quick snack, these cucumber bites are perfect.
Number of Servings: 12

Ingredients

    1/4 cup Daisy Brand Sour Cream
    1 tablespoon Dijon mustard
    12 slices pumpernickel bread
    1/4 seedless cucumber, cut diagonally into 24 very thin slices
    1 cup Daisy Brand Cottage Cheese
    2 tablespoons chopped fresh dill
    2 tablespoons finely chopped red onion

Directions

Mix the sour cream and mustard in a small bowl. Cut each slice of bread diagonally into 2 triangles. Spread about 1 teaspoon of the sour cream mixture on each bread slice. Place a cucumber slice on each triangle and top with 2 teaspoons of cottage cheese. Sprinkle the top of the cottage cheese with the dill and onion.

Serving Size: Makes 12 servings

    I have tried Daisy Cottage Cheese. To me it is to thick so I like to use a different brand Like land O lakes or store brand that is much thinner and tastes better. - 11/1/12

    I think every one on this site understands why the use of brand names and I also do believe they will use what they personally prefer to use so I see nothing wrong with advertised products.This method of advertising has gone on for years in every medium.
